It’s ICE-CREAM TIME!

Can you believe that I made ice cream with coconut milk I found at the dollar store? I can’t believe it! They don’t have any refrigerated sections (excepts for pop and water) and no ice cream at any of my dollar store locations, so figuring out a way to make my own ice cream from a can of coconut milk feels pretty cool.

The process of making it was pretty easy, but I must let you know that this recipe did use a very important tool; an ice cream maker. I had one in my home for a while. It was given to me as a Christmas gift. I loved it then and I love it a little more now because I can make new dollar store flavours for all of you!!

Alrighty! Enough of me talking about it and let me teach you how I did it. Hint* it’s crazy easy.

How to Make Coconut Milk Ice Cream

These are the ingredients and tools that you will need to make Ice Cream:

Tools

  • Ice Cream Maker

  • Freezer

Instructions

  1. Freeze your ice cream maker as per the instructions of your manufacturer, and remove from freezer when you are ready to begin recipe.

  2. Pour two cans of coconut milk into a medium sized bowl and gently mix together. Add in one cup of sugar and 1 tablespoon of vanilla extract and mix well.

  3. With your ice-cream maker ready, pour your coconut milk content into your ice cream maker. Turn on and allow to churn.

  4. Once finished churning, mine took approximately 45 minutes, transfer to freezer safe container for freezing.

The process of making ice-cream isn’t so bad is it? It’s pretty easy and with some creativity, you can make so many different flavours!

For my coconut milk, I purchase it from dollarama from the Fruitropic brand, and this milk always appears thicker when opened. It was used in this recipe and it helped create the texture of ice cream. Some dollar stores carry different brands of it, but as long as the fat content is high.
