With just two humble ingredients - flour and eggs - you can create delicious homemade pasta that’s sure to elevate any meal. By combining these staples in a simple dough, you can craft fresh, tender noodles that are a world away from store bought varieties.
This pasta recipe comes together fast - just 2 minutes to mix the ingredients and 10 minutes to shape the dough. Begin by preparing your flour and creating a well in the centre. Add the eggs to the well and begin mixing, slowly drawing in the flour until a dough comes together. Knead for 10 minutes, until the dough is smooth and springy to the touch. Wrap the dough in a damp cloth and let it rest for 30 minutes.
After the dough has rested, roll it out to your desired thickness, aiming for a translucency where you can just see your hand though it. I enjoy pasta that’s on the thicker side but you can decide your own preference. Fold the pasta dough into three layers, then slice into broad, flat noodles - perfect for pappardelle. Flour your work surface during this process to prevent tearing and noodles sticking to each other.
Cook in boiling salted water between 5-7 minutes. Please cook the same day you make it.
